Café Kitsune. Café Kitsune is one of my favorite coffee shops across Paris so I was so thrilled when they opened two outposts in New York – one in Manhattan’s West Village and one in Brooklyn’s Boreum Hill. The aesthetics here are just gorgeous and it is the perfect place to catch up with a friend over a good coffee.To use a French press, (freshly) ground coffee is placed in the beaker. Then, hot water with a temperature between 199 and 205 degrees Fahrenheit is added. Of course, quantity is important. For 30 grams of grounds, you would need approximately 500 ml of water.Place the seasoned roast fatty side up on the roasting rack. Roast for 15 minutes at 425 F. Reduce the temperature to 325 F and continue cooking for about 45 minutes, or until a meat thermometer reads 135-140 F.
